  1. Soak the saffron in water.
  2. Saute in broth, cauliflower, carrots, red peppers, onions, garlic and rice.
  3. Cook until cauliflower is soft and rice is al dente.
  4. Add tomatoes, saffron, beans, peas, spinach, salt and paprika.
  5. Simmer a few minutes until spinach is wilted and everything is hot.
