Vegetarian Hillbilly Bean Soup

1 pound dry mixed beans 6 cups water 6 tsp vegetable stock mix (used 1 can broth) 3 carrots chopped 3 stalks celery chopped 1 green pepper chopped 19 oz can diced tomatoes 19 oz can Tomato juice 1-2 medium onions chopped 1 small clove garlic chopped 2 tbl parsley

Was and soak beans overnight. Drain and rinse well. Cover in water, boil until tender (about 1 hour). Drain and rinse well again. In a soup pot add remaining ingredients and bring to slow boil. Stirring often. Simmer till veggies are tender and beans are done.

What counts is not necessarily the size of the dog in the fight - it's the size of the fight in the dog......
