Despite its ingredients, and its name, this soup has been adapted from its original to suit the Dutch palate.

  1. Bring the stock to the boil, sprinkle in the broken vermicelli and leave to boil gently 15 – 20 minutes.
  2. Roll the mince into small balls and add in for the last 10 minutes.
  3. Add the parsley and celery just before serving.
