Vicious Garlic Salad

1/4 t. dry mustard 1/8 t. black pepper 1 1/4 t. salt 2 large cloves garlic, crushed 2 T. fresh lemon juice 1/4 cup olive or salad oil 1/4 cup grated Parmesan cheese 1/4 lb. fresh mushrooms, sliced 1 head romaine lettuce, cleaned and chilled

Blend first 7 ingredients in wooden salad bowl,. Add fresh mushrooms and toss lightly. Let mixture stand at room temperature 2 to 3 hours to marinate well. When ready to serve, add romaine lettuce torn into bite sized pieces. Toss gently. Makes 4 to 6 servings. Variation: Avocado or drained artichoke hearts may be used in addition to mushrooms for variety. Source: Celebrating California
