Watermelon Slush

This delicious and super easy dessert recipe is wonderful served with some shaved chocolate bits and a bit of sour cream.

INGREDIENTS: 3 cups cubed watermelon 2 tsp. light corn syrup 1/2 cup sugar 1/2 cup water 1/8 tsp. salt

PREPARATION: In a heavy saucepan, combine sugar and water and bring to a boil, stirring until the sugar dissolves. Let cool completely. Puree the watermelon in a blender and measure 2 cups of the puree. Mix with corn syrup and cooled sugar syrup.

Place in freezer container and freeze for about an hour, until the mixture begins to freeze around the edges. Remove from freezer and beat thoroughly. Return to freezer. Repeat this process for 3 more times every 30 minutes, until mixture is frozen to a slush consistency. Serves 8
