Emeril's "Essence"[]

  1. In a large bowl mix together the "essence", oregano, pepper, cumin powder, garlic powder, egg whites, bread crumbs, and salsa.
  2. Use a garlic press and press garlic into the turkey.
  3. Add the turkey, and mix thoroughly.
  4. Add olive oil to pan, and pre-heat on medium for 4–5 minutes.
  5. Shape into 4 burgers or 9-12 meatballs.
  6. Cook on stove top in cast iron grill pan or large non-stick pan, over medium heat. Cook burgers / meatballs for 6–8 minutes per side until center is no longer pink.
  7. Cover pan with lid for 2 minutes, after cooking starts.
  8. Place Burgers / Meatballs on rolls, add toppings, and put them In the oven for 5–10 minutes, or until the rolls begin to turn brown.
