White Bean Dip With Lots of garlic
- 4 Large cloves garlic
- 2 Cans White beans, Such as navy beans, Cannellini or Small Lima beans, Drained And Rinsed (15 Oz. Each)
- 5 T. Extra Virgin olive oil
- 2 to 3 T. fresh lemon juice
- 3/4 T. kosher salt
Ground black pepper
Pita Chips, bagel Chips, Grilled Eggplant Spears
In The Bowl of a Food Processor Fitted With Metal Blade, Process The garlic Until Finely Minced. Add The beans, olive oil, 2 T. of The lemon juice, The salt, And a Few Grinds of pepper. Process Until Pureed And Smooth. Taste And Add More lemon juice, salt And pepper, if Desired. Transfer to a Serving Bowl And Serve at Once. This Dip Can be Prepared up to 2 Days in Advance. Cover And Refrigerate. Remove From Refrigerator 20 Minutes Before Serving.
