White Bean Salad

2 lemons 1 t. Dijon mustard 1/4 cup olive oil 1 cup canned cannellini beans, drained 6 sprigs parsley 1/2 cup chopped walnuts 1 small head butter lettuce Pepper to taste

In bowl, mix juice of 1 lemon, mustard and oil. Put drained beans in bowl. Chop parsley and stir into beans. Add chopped walnuts and mix gently. Put small leaves of butter lettuce on plate and put beans in center. Season to taste with pepper and garnish with second lemon. Serve at room temperature. Serves 2 Source: My Old Recipes
