White Potato Pie
This was the way that my mother made White Potato Pie. It had
a lemony flavor and this one with a Sweet Potato Pie taste.
This recipe makes 2 pies.
3 potatoes - peeled, boiled and mashed (not Yukon Gold)
2/3 cup butter
1 cup white sugar
1/2 tsp baking powder
1/8 tsp salt
1/2 cup heavy whipping cream*
1/2 cup milk
2 tsp lemon zest
2 tblsp lemon juice
1 tsp vanilla extract
4 eggs, beaten
2 (9 inch) unbaked pie shells
Preheat oven to 350 degrees. Mix sugar, baking powder and salt.
Add potatoes and butter (or margarine) and mix well. Gradually
add whipping cream and milk, stirring until well blended. Add
beaten eggs and mix well. Pour mixture into pie shells and bake
for 55 minutes or until knife inserted in center comes out clean.
This pie is best when served cold.
- I have used evaporated milk in place of the whipping cream with
good results.
When we are grateful for the good we already have, we attract more good into our life. On the other hand, when we are ungrateful, we tend to shut ourselves off from the good we might otherwise experience. ~Sylvia
