Being a very popular dish among the people of Myanmar, and being regarded as an extremely easy dish to make, Yangzhou Fried Rice is a food item that you will certainly not regret trying. The dish is made with an assortment of unique ingredients and it is packed with nutrients and desirable flavours.
Ingredients
Spicy Ketchup Sauce
Ketchup 2 tablespoons
Sriracha chilli sauce 1 tablespoon
Fried Rice
dried shrimp A Handful
peanut oil 2 tablespoons
cooked jasmine rice, a day old 3 cups
eggs (beaten) 3 Nos
medium sized carrot, 1 Nos (Diced)
frozen peas 1 cup
cooked Chinese pork or ham, 1 Ounces (Diced)
peeled and grated ginger 1 tablespoon
Steamed and diced shiitake mushrooms 3 Nos
light soy sauce 1 to 2 tablespoons
toasted sesame oil 1 teaspoon
Sea salt and white pepper to taste
sliced on a diagonal, for garnish 1 to 2 green onions,
Method of Preparation
1. Place the dried shrimp in a small bowl, add some hot water and let it soak for 20 minutes. After the allotted time drain the water from the shrimp and keep it aside.
2. For the sauce, add in the ketchup and chilli sauce and mix it together in a bowl.
3. Place the wok over high heat and add 1 tablespoon of peanut oil. Then keep stirring adding the eggs letting it scramble. Once cooked take out the eggs and set it on a plate.
4. On to the same wok, add in the remaining oil. Then add the ginger, after a minute, add the carrots and stirfry. One minute after adding the carrots add the pork, the mushrooms the soaked dried shrimp and cook for 2 minutes. Then add the cooked rice and peas tossing them together. Once they are fully mixed the cooked egg and season the mixture with salt, pepper and some soy sauce.
5. Once everything is thoroughly cooked and mixed add the sesame oil and the spice sauce. Sprinkle some green onions and serve hot.
