Rinse and pat dry 2 cut up chickens with paper towels. Heat 1/2 inch vegetable oil in a skillet with a cover. Season chicken with 1/2 tsp salt. In a plastic bag, mix together 2 cups flour, 1 tbs salt, 2 tbs chili powder, 2 tbs cumin, 1 tsp pepper, and 1/2 tsp cayenne. Toss the chicken in the bag until coated.

Add the chicken to the skillet. Cover the skillet and cook for 7 min. then uncover the skillet, turn chicken and cook uncovered for 7 min. Turn chicken and cook to ensure that both sides are golden brown and that chicken is cooked though. Drain chicken on paper towels. SERVE HOT, WARM, OR AT ROOM TEMP WITH LEMON OR LIME WEDGES.
