Description
Makes 6 servings
Ingredients
- 1 tablespoon butter
- 1 small onion, minced
- 1 clove garlic, minced
- 1 zucchini, julienned
- 1 yellow squash, julienned
- 1/2 teaspoon dried dillweed
- 3 cups hot cooked rice (cooked in chicken broth)
- 1/2 cup grated Parmesan cheese
- 1/4 cup dry white wine
- 1/4 teaspoon ground white pepper
Directions
- Melt butter in large skillet over medium-low heat. Add onion, cook 2 minutes. Add garlic; cook 1 minute longer. Stir in zucchini and dill; cook 4 minutes longer.
- Stir cooked rice into zucchini mixture. Add cheese, wine, pepper and pepper sauce.
