  1. Coat 10-inch quiche dish or heavy skillet with cooking spray.
  2. Layer rice, zucchini, mushrooms and basil in dish.
  3. Combine eggs, cheese and salt; beat well with wire whisk.
  4. Pour over vegetables and rice.
  5. Bake at 400 °F for 30 to 35 minutes or until puffed and browned.
  6. Let stand 5 minutes before serving.
